To make Ann Clark royal icing, mix the contents of the pouch with 1 lb (3-4 cups) of powdered sugar and blend on low for 45 seconds, then high for 3 minutes; to adjust consistency, add water a half teaspoon at a time for thinning or more powdered sugar for thickening, aiming for soft peaks for piping borders or a honey-like flow for flooding.
- Combine: Add the contents of the Ann Clark meringue powder pouch and 1 pound (about 3-4 cups) of powdered sugar to a clean mixer bowl.
- Mix Low: Blend on low speed for about 45 seconds to incorporate.
- Mix High: Increase speed to high and beat for 3 minutes.
- Adjust: Add water (1/2 teaspoon at a time) to thin for flooding or add more powdered sugar to thicken for piping.
